If yoThe new rice pudding is black, vegan, and a whole lot healthier for you. This recipe is only slightly sweet and uses black rice, which has been touted as a superfood.

The Superfood You’re Not Eating
Move over the blueberries, this Thai black rice has got more anthocyanins than you.
Black rice has more fiber, protein, iron, and antioxidants than any other type of rice, quinoa, or other whole grain.
Black Rice = Forbidden Rice
Thai black sticky rice is deep purple, variegated in color, and long grained with pointed ends. We used this for the recipe.
The Chinese version, also known as forbidden rice, is a black, shorter grained, and round.
The terms for black rice and forbidden rice are used interchangeably.
What about wild rice?
Wild rice is black, but it does not have the glutinous properties the Asian varieties do. It would not work well in this recipe.
Arsenic in rice?
Arsenic in general, is found in all types of rice depending on where it is grown, but is higher in brown and black varieties.

Stovetop Pudding
The method for cooking here shown here is done on the stovetop, which does require some elbow action.
You could cook it in a rice cooker or slow cooker, but after a long day, when your brain cells have been depleted of all thinking capabilities, this simple rice pudding is just the right relaxation remedy.
Especially if you do it while drinking wine.
How to make Thai Black Rice Pudding
Step 1: Soak rice
There is some pre-work involved, and this one should occur 1-2 days beforehand.
Otherwise, you’ll be standing at the stove to cook those grains a whole lot longer than necessary.
- Cover the rice with double the amount of water.
- After soaking overnight, drain and rinse the rice. This will also help remove any arsenic, if there is any,
Step 2: Pour glass of wine
At this point, it does not matter what kind of wine it is.
Just something that will keep you company for the next 30 minutes.
Step 3: Watch pot boil
You can do that right?
Add the following ingredients and bring to a boil.
- 1 can coconut milk
- rice
- water
- brown sugar
- salt
At this point, your sole focus is sipping wine. It will take a good 5-8 minutes to come to a boil over medium high heat.
Step 4: Stir pot
By this time, the wine should be working its magic.
You may start to feel slightly inebriated from the wine, and you should start feeling a hair short of awesome.
Now you need to stir. Stir the pot, so the rice does not burn.
Step 5: Keep stirring
Keep stirring the pot, so it doesn’t burn. Is this too tiresome?
Constant stirring means that you’re working out your energy for the day. Instead of going to the gym, stir this pot.
Step 6: Serve
After about 30-40 total minutes, taste the rice. It should be fully cooked but slightly al dente. Remove from the heat.
Slice fruit and open a can of coconut cream. Not coconut milk but coconut cream.
Spoon some hot rice pudding into a bowl. Top with the fresh fruit of your choice and a spoonful of coconut cream.
I’m not doing all that stirring
If you prefer the set it and forget it method, you can also put all the ingredients into a rice cooker, and cook as you would regular rice.
However, it may just be a little overcooked, rather than having the toothsome bite you can control by stirring it on the stovetop.
Leftover Magic
Was that too much rice to eat in one day? Pour the leftovers into jars or ramekins, and serve the next day cold.
In Asia, black rice porridge/pudding is often eaten with chunks of yams.
Instead of fruit, you could put roasted cubes of yams on top of the black rice before topping with coconut cream.
Tips to make it better @ home
- After soaking the rice overnight, be sure to drain and rinse the rice. That will help wash off any harmful arsenic.
- Keep stirring the pot, so it doesn’t settle and burn.
- If you don’t soak the rice overnight, you’ll just need to add more water and cook the rice longer. Though it could take twice as long.
- If you don’t care for the stovetop method, you can also cook in the rice cooker. Cook as you would regular rice or on the porridge setting. It may just be softer and less al dente than the stovetop method.
- Can be served hot or poured into containers, put in the fridge, and served cold the next day.

Superfood Thai Black Rice Pudding
Ingredients
- 1 c thai glutinous black rice soaked in water overnight
- 1 can coconut milk 14 oz
- 2 c water
- 1/4 c brown sugar or sweetener of choice
- 1/2 tsp sea salt
Garnish
- coconut cream
- fruit of choice: mango, peaches, nectarines, blueberries, etc.
Instructions
- Put all ingredients in a pot and bring to a boil.
- Once it starts to boil, it will begin to thicken. Keep stirring every 2-3 minutes until the rice is al dente. This should take about 30 minutes. The consistency would be like oatmeal. If it gets too thick, you can add a bit of water to loosen.
- Serve hot with fresh fruit and coconut cream.
