Easy Vegan Wild Rice Fried Rice

Ingredients

  • 3 c cooked wild rice see Note 1 - 3
  • 1 Tb grapeseed oil
  • 8 oz shiitake mushrooms or other mushroom of choice
  • 1 clove garlic minced
  • 1 stalk celery sliced 1/2" thick on the bias
  • 2 tsp tamari sauce or soy sauce
  • 2 tsp toasted sesame seeds

Optional Garnish

  • 1 tsp sesame oil
  • celery leaves

Instructions

  • If not already cooked, cook wild rice according to package directions.
  • Heat oil in a pan to medium heat. Add mushrooms and tamari. Stir fry for 2-3 minutes until mushrooms are softened and cooked through.
  • Add garlic and stir fry for 30 seconds until fragrant.
  • Add celery and stir fry for 1-2 minutes until celery is softened.
  • Add rice and stir fry for 3-4 minutes until rice is heated through.
  • Serve hot. Garnish with sesame seeds, sesame oil, and celery leaves.

Notes

  1. Wild rice comes as pure wild rice or as a blend with other common rice types such as brown rice and long grain white rice. This recipe uses a wild rice blend because the added texture of the other grains makes it a little more palatable.
  2. Cook the wild rice according to the package directions. Use vegetable stock instead of water if you can for extra flavor.
  3. Typically, fried rice is made with leftover cold rice. If you have hot wild rice on hand, you can still stir fry hot without clumping too much, since it is not as sticky as regular rice.
  4. Use a nonstick pan or well seasoned wok/cast iron pan to avoid having your rice stick to the pan.
  5. Be careful about washing your mushrooms in water. The water will leach out when cooked and may make the fried rice soggy.
