In case you love sour cream 'n onion dip, but can't have the dairy, there are really good vegan alternatives that taste just like the 'real' thing. Add a few common spices and three kinds of onion for a cool, creamy vegan onion dip to serve with veg sticks or potato chips.
Combine the onion and olive oil in a small skillet over medium heat. Stir for 4-6 minutes until the onions are translucent and browned. Adjust the heat as needed and add a splash of water if the pan becomes too dry.
Remove the cooked onions to a bowl, and let cool for about 5 minutes.
Once the onion mixture is cool to the touch, stir in the remaining ingredients.
Serve immediately or store for up to a week in the fridge. The flavors will deepen a little bit if it sits for a day.
