Ingredients
The one key ingredient you will need is a plant based sour cream, which can actually be quite tasty.

- Vegan Sour Cream - I used the Cocojuene brand, which is much thicker and less watery than a vegan yogurt. It also has a very smooth texture and doesn't taste like coconut milk.
- The Cocojuene sour cream is made of organic coconuts, water, organic lemon juice, organic tapioca, sea salt, organic nutritional yeast, organic rice vinegar, and vegan cultures (such as lactobacillus bacteria).
- Does it taste like cow milk sour cream? It is denser and doesn't have quite the same lightness that a cow milk sour cream does.
- I tried mixing it into a mushroom stroganoff, but it did not achieve the same effect.
- For the purposes of this sour cream dip, it does taste startingly similar with a little less tanginess and lightness in the mouth.
- Liquid Aminos - Substitute with soy sauce or just plain salt.
See recipe card for quantities.
Instructions
Besides just mixing all the ingredients together, you will need to a do a little bit of cooking to brown the onions.

- Step 1: Combine the onion and oil over medium heat in a nonstick skillet.

- Step 2: Stir gently for 4-6 minutes until the onions are translucent and browned at the edges. Adjust the heat as needed to prevent burning or add more heat. Add a splash of water if the pan is getting too dry.
Hint: Do not add salt to the pan, which will cause the onions to 'weep' liquid. They will still brown eventually, but it will take a bit longer.
Storage
Store in the fridge for up to a week.

Make sour cream from coconut yogurt
If you can't find coconut sour cream, you can also try making it from vegan greek yogurt or coconut yogurt that has been strained overnight in a fine mesh strainer or with cheesecloth to make it denser.
Jus add a little bit of lemon juice or rice vinegar, salt and nutritional yeast.
